Abstract

Sago starch is one of the most abundant sources of carbohydrates in Indonesia. The starch modification plays a vital role in improving its functional properties, and hence, could be applied to a broad range of applications. Heat-moisture treatment (HMT) is a physical modification of starch, which involves heating starch at high temperatures but at low moisture content. The HMT of sago starch (15% moisture) was conducted in an autoclave containing fine pressure adjustment and saturated steam production at various temperatures (115, 125, and 135 ºC). The Brabender viscograph showed that the HMT decreased the viscosity and the breakdown of the starch, suggesting an improved mechanical property of the starch, particularly at HMT 135 ºC. The mechanical properties of HMT starch films confirmed an enhanced tensile strength. Adding sappan wood (Caesalpinia sappan L.) extract further improved the films' antioxidant properties and could extend the fresh-cut apples' shelf life during storage in a refrigerator (± 4ºC) for 15 days. This antioxidant-active film successfully delayed the browning effect on fresh-cut apples.
